Tomatoes are one of nature’s summer bounties the world over, and are a culinary favorite across cultures. Think Tomatina!
In this episode Vaidya Priyanka crafts for us a flavorful soup from heirloom tomatoes, suffused with several layers of nutrition. This soup is especially good during the seasonal transition of summer to fall(autumn).
What is interesting about this recipe is its international character, something that certainly befits the cross-cultural popularity of the tomato. There is garlic, and black pepper, basil leaves and oregano, infusing it with a traditional Italian flavor. There’s also almonds and almond milk for protein. Then comes an induction of spices from the Indian subcontinent, starting with turmeric, and ground cumin for its digestive benefits, followed by cilantro. Finished with a topping of dill leaves. European bistro meets Indian kitchen.
