Maitake is a delicious medicinal mushroom, known in Japan as the ‘dancing” mushroom…there is a lovely legend of a group of Buddhist nuns dancing in celebration on discovering them in a remote mountain trail. The Ancients prized it highly enough that it could be exchanged for its weight in silver.
Maitake mushrooms are known for their ability to prevent and fight cancer, boosting the body’s metabolism and regulating blood sugar. They are also known to help lower cholesterol levels and boost immune function.
With such a walk-in pedigree into the ranks of health foods, we bring to you this extremely healthy Asian inspired stir fry of maitake and leafy greens (chard and kale). Garlic is a blood purifier, and some toasted sesame (mixed with turmeric) is very good for calcium. With ginger and red chili flakes to round it off, you have a dish that manifests plentiful spicy overtones seamlessly. Perfect for a winter evening with a main dish or just wonderful by itself.
