Heirloom Salad

Heirloom SaladWhen you need something quick, really healthy and really tasty, think of this recipe with Heirloom tomatoes.

We begin with sautéing heirloom tomatoes and chilies in olive oil, with dried parsley thrown in and arugula on the side. Picture yourself in Little Italy. Grind in black pepper, garlic, fresh basil leaves, balsamic vinegar, almonds and olive oil. Crown your creation with some raw cucumber and red onion slices and basil.

It is hard to think of something simpler or healthier. Tomato nirvana, Italian inspired.
